Sopapilla Burger

This is one of my husband's favorite meals from his childhood. My mother-in-law made this over the Christmas holidays and it lived up to all the hype Brian gave it.

Making the sopapilla is time consuming, but it's worth the effort in the end.

Ingredients:

Sopapilla:

2 Tbsp shortening

4 Cups self-rising flour

1 ¼ Cups very warm water

oil for frying

Filling:

1 pound ground beef

16 oz. tomato sauce

4.5 oz can chopped green chilies

½ tsp salt

½ tsp garlic powder

Instructions:

For the Sopapillas:

Cut 2 tablespoons shortening into 4 cups self-rising flour. Add the water and mix. Knead the mixture for five minutes on floured surface. Let rest 15 minutes. Divide dough into 12 balls. Roll out and fry in hot oil. You can fry it in a large pot or fryer.

For the Filling:

Brown 1 pound ground beef. Add to 16 oz Hunt's tomato sauce, 1 4.5 oz can chopped green chilies. 1/2 teaspoon salt, 1/2 teaspoon garlic powder. Heat.

Remember, y'all, it’s all about the prep. Take away the stress by doing the prep the night or day before.

For best results when you're baking, leave butter and eggs at room temperature overnight.

When chopping herbs, toss a little salt onto the cutting board; it will keep the herbs from flying around.
