Easy Chicken Parmesan

This is a great healthy meal for a busy weeknight.

Easy Chicken Parmesan Ingredients: 1 tbsp olive oil 6 skinless, boneless chicken breast halves 1 1/2 c regular spaghetti sauce (I use Basil & Parmesan flavor) 1/4 c grated low fat parmesan cheese 1 1/2 c shredded 2% low fat mozzarella cheese

Instructions: Heat oil in 12-inch skillet over medium-high heat. Add chicken and cook 10 minutes or until well browned on both sides. Stir sauce and 3 tablespoons parmesan cheese in skillet. Reduce heat to medium. Cover and cook 10 minutes or until chicken is cooked through. Sprinkle mozzarella cheese and remaining parmesan cheese over chicken. Let stand 5 minutes or until cheese is melted. Goes great with whole wheat pasta and a salad. **the last time I made this recipe, I cooked the chicken on the George Forman and it worked out perfectly.

Remember, y'all, it’s all about the prep. Take away the stress by doing the prep the night or day before.

For best results when you're baking, leave butter and eggs at room temperature overnight.

When chopping herbs, toss a little salt onto the cutting board; it will keep the herbs from flying around.
