Mexican Lasagna

This recipe is really easy to throw together and it is packed with a lot of Mexican flavor. Everyone in our family thought it was a keeper recipe.

Ingredients:

12 small corn tortillas

1 can enchilada sauce

1 can refried beans

1 pound hamburger meat

3/4 cup water

Taco seasoning

Shredded cheese

Any other ingredients you normally enjoy on tacos:

olives, lettuce, tomatoes, salsa, guacamole, onions, etc.

Instructions:

Preheat the oven to 350.

Brown the hamburger meat in a medium sized skillet. Once browned, drain the grease and return to skillet. Add the taco seasoning and 3/4 cup water. Bring to boil and then reduce heat and shimmer for 5 minutes.

Pour small amount of enchilada sauce in 9x13 pan so the tortillas won't stick.

Layer 6 small tortillas in pan, covering the enchilada sauce.

Next, layer on refried beans, taco meat, cheese, then enchilada sauce. This is also when you would add other taco-ish ingredients.

Do one more layer of tortillas, beans, meat, cheese & sauce.

Bake for 30 minutes, adding a few more minutes if cheese isn't completely melted.

For best results when you're baking, leave butter and eggs at room temperature overnight.

When chopping herbs, toss a little salt onto the cutting board; it will keep the herbs from flying around.
