Chinese Chicken Salad

Chinese Chicken Salad

Yield: 4 servings

Ingredients:

5 oz. pre-washed lettuce

1/4 head red cabbage, shredded

1/2 lb. cooked and shredded chicken

1 red pepper, diced

4 scallions. sliced

1 can mandarin oranges, drained

1/2 cup chow mein noodles

Dressing:

2 teaspoons minced garlic

2 teaspoons grated ginger

2 1/2 tablespoons brown sugar

1 tablespoon sesame oil

2 tablespoons soy sauce

2 tablespoons white vinegar

3 tablespoons canola oil

Instructions:

1. Place all salad ingredients into a bowl. Set aside.

2. In a small bowl, whisk together all ingredients for the dressing. Toss salad with dressing and serve immediately.

For best results when you're baking, leave butter and eggs at room temperature overnight.

When chopping herbs, toss a little salt onto the cutting board; it will keep the herbs from flying around.
