Stuffed Pepper Soup

The name says it all for this dish.

Stuffed Pepper Soup

Yields: 8 servings

Ingredients:

1-1/2 lbs ground turkey

3 green peppers, chopped Coupons

1 onion chopped

2 garlic cloves, minced

2 (10.75-oz) cans tomato soup

4 cups beef broth

1 (28-oz) can crushed tomatoes

1-1/2 cups cooked brown rice

Instructions:

1. In a Dutch oven over medium heat, cook ground turkey with chopped peppers and onions. Drain fat.

2. Add garlic and cook for 30 to 60 seconds. Stir in tomato soup, beef broth and crushed tomatoes. 3. Bring to a boil. Reduce heat to low. Cover and simmer for 20 minutes.

4. Stir in cooked rice and serve.
